Ingredients
  • 2 Chicken breast (Boneless and skinless)
  • 1 tsp Salt
  • 1/2 tsb Black pepper
  • 1 tsb Italian seasoning
  • 3 cloves Garlic (Minced)
  • 1 cup Heavy cream
  • 3/4 cup Chicken broth
  • 1/2 cup Parmesan cheese (Grated)
  • 1/2 cup Sun-dried tomatos (Chopped)
  • 1 tsb Dried Chilli Flakes (Optional, for a bit of heat!)
  • 2 cup Spinach (Fresh is best, but frozen is okay.)
  • 2 tbsp Butter
  • 1 tbsp Olive Oil
Instructions

    Prepare the Slow Cooker: Lightly grease the inside of the slow cooker with olive oil or cooking spray.

    Season the Chicken: Sprinkle the chicken breasts with salt, black pepper, and Italian seasoning, then place them in the slow cooker.

    Add Ingredients: Pour in the chicken broth, then add the minced garlic, heavy cream, parmesan cheese, sun-dried tomatoes, and chilli flakes (if using). Place the butter on top of the chicken.

    Slow Cook: Cover and cook on low for 4-5 hours or high for 2-3 hours, until the chicken is tender and fully cooked.

    Finish with Spinach: About 10 minutes before serving, stir in the fresh spinach and let it wilt in the creamy sauce.
