Ingredients
  • 4 Salmon Fillets (Skin on or off)
  • 1 tbsp Olive Oil
  • 2 tbsp Butter (cubed)
  • 5 cloves Garlic (Minced)
  • 1/2 cup Sun-dried tomatos (Drained and chopped)
  • 1 1/2 cups Heavy Cream
  • 1/2 cup Parmesan cheese (Grated)
  • 3 cups Baby Spinach (Fresh)
  • 1/4 cup Fresh Basil (Chopped)
  • Salt and Pepper (Taste)

    Pat the salmon fillets completely dry with a paper towel and season both sides generously with salt and pepper. Heat the olive oil and 1 tablespoon of butter in a large cast-iron skillet or pan over medium-high heat. Place the salmon fillets in the hot pan, flesh-side down. Sear for 4-5 minutes until golden brown and crispy. Flip the fillets and cook for another 3-4 minutes, then remove them from the pan and set them aside.

    Reduce the heat to medium. In the same skillet, add the remaining 1 tablespoon of butter. Add the minced garlic and cook for about 1 minute until fragrant, being careful not to burn it. Stir in the chopped sun-dried tomatoes and cook for another minute.
