Ingredients
  • 250 g Your Favourite Dried Pasta (Rigatoni or Penne work well)
  • 200 g Lamb (Cut into 1/2-inch cubes)
  • 1 tbsp Olive Oil
  • 2 cloves Garlic (Minced)
  • 1/2 cup Sun-dried tomatos (Drained and chopped)
  • 50 g Fresh Spinach (Roughly chopped)
  • 1/2 cup Heavy Cream
  • 1/4 cup Parmesan cheese (Grated)
  • Salt and Pepper (To taste)
  • Fresh Basil Leaves (For garnish)

    Step 1: Cook the Pasta

    Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Reserve about ½ cup of the pasta cooking water before draining.

    Season the lamb cubes generously with salt and pepper. Add the lamb to the hot skillet in a single layer (work in batches if necessary to avoid overcrowding).
